
Almond and vanilla shortbread
Ingredients
- 500g blanched almonds
- 100 g caster sugar
- 125g of fine semolina
- 1/2 packet of baking powder
- 1 sachet of vanilla sugar
- 100g icing sugar
- 3 eggs

Preparation
Today I offer you cakes that are simple to prepare and absolutely delicious,
Small soft almond shortbreads flavored with orange blossom and vanilla, a little treat to serve at tea time and to offer to your loved ones during the holiday season!
I chose to make them from molds maamoul, which I find pretty, but you make them very well in the form of: ghoriba classic.
In a bowl, beat the eggs, add the sugar, yeast and vanilla sugar, mix everything well.
Little by little add the almonds and semolina.
Work this mixture vigorously with the palm of your hand until you obtain a homogeneous dough or in the bowl of a pastry robot.
Moisten your hands with orange blossom water, divide the dough into several balls the size of a walnut.
Insert the dough into the mold that you have previously floured.

Tap gently to bring out the cake.
Arrange them on a buttered baking tray, sugar side up and bake in a medium oven (th. 5-6) for 20 to 25 min.
Serve these almond and vanilla shortbread sprinkled with icing sugar with a good mint tea.
These shortbreads keep well in airtight containers in the freezer. Take them out 10 minutes before serving.
