Rezat el kadi (Judge’s turban)

Ingredients

  • 500 g flour
  • 1 tsp salt
  • 1 tablespoon of instant or classic baker’s yeast (optional
  • eau tiède pour ramasser la pâte
  • oil and butter to work the dough
  • Preparation

    Rezat el kadi (in French Turban du Juge) is a crepe made with msemen dough but which is shaped into small filaments and which is wrapped around the hand before making a pancake. The latter is then cooked on both sides on a hot pan. At the end of cooking, press on the center of the pancake and let all the filaments appear.

    Shaping by hand requires time and dexterity but the result is worth it.

    Mix all the ingredients and form your ball, knead it for 5 to 10 minutes to soften it.

    Oil your ball, divide your dough into small balls the size of a clementine, leave to rest for 10 to 15 minutes.

    Oil the work surface, spread your little ball lengthwise thinly but not too much

    Make cuts using the roulette without going all the way to the edges.

    Brush with melted butter or oil/butter mixture.

    Start to roll it up delicately to make a roll

    Then pull on both ends gently to lengthen it a little more and form a snail by gently tightening it or rather a turban.

    Enjoy while still hot with honey and a glass of tea!!!!!!!
