- water, orange blossom water
- 80 gr of flour
- 160 gr of smen (salted butter)
- 1/2 tbsp granulated sugar
- 1 pinch of salt
- for the date stuffing:
- 250g date paste
- oil for frying, honey and crushed almond
- vegetable oil
- 1/2 tsp cinnamon powder
- 1/2 tsp cinnamon powder
Preparation
To prepare the makrout rolled date recipe:
In a terrine, put the medium semolina, the flour, the sugar and the pinch of salt and the fat, mix everything.
Gather everything with the water and orange blossom water mixture, so as to obtain a dough that is neither too dry nor too soft, let the dough rest.
Meanwhile, prepare the date stuffing, if your date paste is too hard, steam it, it will become very soft.
Knead the date paste with a little oil, add the cinnamon and clove powder. Spread the semolina dough on the work surface to 5 mm thickness, add the date paste on top, also spread apart to almost 4 mm, start rolling the two doughs together to form a serpentine.
Then cut small rolls less than 2 cm wide, fry the rolls in a hot oil bath until they turn a nice golden color, drain them, and immerse them directly in the cold syrup! or let it cool and immerse it in the hot syrup for a good result.
You can decorate, and it is optional, the edges of the rolls with crushed almonds.
