
Mtakba with dates
Ingredients
- 1kg of medium semolina
- 200g butter
- Date paste or elgherss
- 1 teaspoon ground cinnamon
- orange blossom
- water, salt, sunflower oil

Mtakba with dates is a delicious semolina pancake filled with date paste, also called bradj or mbardja or mtekba, a very Algerian recipe to accompany a good cup of coffee with milk or tea.
Knead the date dough with a little oil, cinnamon, and a little orange blossom to flavor it, until the dough becomes very smooth and malleable.If the dough is too hard, put it in the microwave a little to soften.
In a terrine, mix the semolina with the salt and melted butter, sand well between your hands, then add water and mix with orange blossom.

Flatten a ball of semolina dough to make a pancake (like kesra..), then cover with a date pancake (which should be about 1 cm thick) and cover with the second ball of semolina dough. Weld the contour well.
