
Date-filled cakes – Maamoul
Ingredients
- 350 g of dates
- 150 g hazelnuts (shelled, toasted)
- 300 g butter
- 50 g caster sugar
- 1/4 glass of edible oil
- 1/2 glass of orange blossom water
- 2 tablespoons of crème fraîche
- 50 g washed, toasted ground sesame
- 1/4 teaspoon of cinnamon
- 4 pieces of ground gum arabic
- 1 teaspoon of butter
- 2 teaspoons of orange blossom water
- Flour according to mixture
Preparation
Cakes filled with dates keep very well in an airtight container,
Lhe molds also differ in their rounded, flattened, striated, zig zag imprints… enough to vary the patterns. My mother has a very rich collection, around twenty pieces that she keeps preciously. But rest assured, it is possible to make maâmouls without the mold, simply shape a rounded, stuffed ball of dough using the palm of your hand, then decorate it with tongs, a fork or a knife.

Preparation of cakes filled with dates – Maamoul:
In a glass utensil, put the butter, sugar and crème fraîche. Mix well. Add the oil, then 1/2 glass of orange blossom water, then the flour gradually until you obtain a soft dough.
In a salad bowl, put the ground dates, the toasted and ground sesame, the hazelnuts, cinnamon, gum arabic then the orange blossom water and the butter. Mix well. Make small meatballs, set aside.
Spread the dough, cut into rounds, place the date balls in each round then fold the dough over the date balls.

Take the Maamoul molds and press in the ball of dough. Give it a good cut on the work table and will the dough come out easily? place on a baking tray, cook at average temperature 170°C for 25 minutes.
Remove from the oven, coat in powdered sugar.
